Who we are

Comal & CAFETERIA LA PROGRESENA, INC is a counter service restaurant specializing in Central American and Caribbean comfort food. Our kitchen opens before sunrise so that by 8:00 AM the beans are simmering, the tortilla dough is rested and the first pot of coffee is ready.

We serve three kinds of guests. There are people on their way to work who need a filling breakfast in a few minutes. There are families and friends who sit down for a long lunch. And there are companies, churches and party hosts who order catering trays for groups of fifteen to two hundred.

All day breakfast built around eggs, beans, plantains and handmade flour tortillas
Lunch plates with braised, grilled and fried mains plus rice, beans and salad
Antojitos such as pupusas, tamales, pastelitos and yuca frita
Fresh fruit licuados, house horchata and jamaica, and strong Latin coffee
Catering packages delivered hot with trays, serving utensils and setup
Call ahead pickup for individuals and offices

How a day runs

From first light to last plate

5:30 AMBeans on the stove, dough mixed, coffee roasted beans ground.
8:00 AMDoors open. Baleadas and breakfast plates start flying.
11:00 AMLunch line opens with the day's braises, grill items and special.
2:00 PMCatering trays for evening events are packed and sent out.
5:00 PMDoors close and we prep for tomorrow.
